Grandma Betty’s Crazy Good Pumpkin-Applesauce Bread

Ingredients:

  • 2/3 Cup Shortening
  • 2 and 2/3 Cups Sugar
  • 4 Eggs
  • 1 Cup Canned Applesauce
  • 1 Cup Mashed Pumpkin
  • 3 and 1/3 Cups All-Purpose Flour, sifted
  • 2 Teaspoons Baking Soda
  • 1⁄2 Teaspoon Baking Powder
  • 1 1⁄2 Teaspoons of Salt
  • 1 Teaspoon Cinnamon
  • 1⁄2 Teaspoon Mace
  • 1⁄2 Teaspoon Nutmeg
  • 2/3 Cup Apple Juice
  • (Optional) 1 Cup Walnuts or Pecans, chopped

Cream together shortening and sugar. Add eggs, one at a time, beating after each addition. Stir in applesauce and pumpkin, sift together dry ingredients and add alternately with apple juice. Stir in nuts. Turn batter into 2 greased 9 X 5 X 3-inch loaf pans. Bake at 350 degrees for one hour or until done.

Makes 2 loaves. One loaf can be wrapped in foil and frozen.

Editor’s note: The first time I made this, I got a little zealous with my stirring of the pumpkin and applesauce and flopped a big blob out that landed on between my toes. Ick! I also drizzle cream cheese icing over the bread for extra yumminess. I use the ready-made kind; warm it in the microwave for about 20 seconds, stir and then drizzle over sliced bread with a spoon.
