Cooking in Bloom is a local program that hosts healthy and sustainable cooking classes for kids. They are also our source for recipe inspiration to go along with our issue themes. This month, we’re looking forward to summer camps! So Denise Albert, Cooking in Bloom owner, mom and recipe developer, shared one of her favorite recipes to teach kids in her summer camps programs: The 10 Minute Tostada. 

Cooking an easy and delicious meal with your kids is a wonderful way to spend a little quality time together while school is out. Make tonight Tostada Tuesday! Enjoy! 

Ingredients:

For Tostadas

  • 4 corn tortillas (6” round)
  • 1 tablespoon olive oil
  • ½ small red onion
  • ¼ teaspoon kosher salt
  • 1 can reduced sodium black beans (15 oz can, rinsed and drained)
  • â..." cup prepared salsa (recipe below)

For Salsa

  • Diced tomatoes
  • Jalapeno slices
  • Fresh cilantro
  • Fresh squeezed lime juice
  • Optional Toppings
  • Diced avocado
  • Diced red onion
  • Sliced cabbage
  • Shredded cheese or queso fresco
  • Sour cream or plain Greek yogurt
